Lazy Skillet Lasagna

Welcome to Foodie Friday!! I was lazy after work tonight so I made a quick skillet meal with things I had around the house. Give it a try it’s delish!




























Skillet Lasagna

A very easy and quick delicious meal it what I made for dinner tonight.

15 oz can chunky tomato sauce
¼ teaspoon garlic (I use fresh 1 clove you can use dried too)
1 teaspoon Italian Seasoning (I use the one from http://www.KitchenStories.etsy.com )
1 teaspoon parsley
¼ teaspoon black pepper
1 cup cottage cheese (fat free, low fat, or full fat any kind will do)
2 cups shredded mozzarella cheese
¼ cup grated parmesan cheese (you can use the powder from Kraft if you like)
2 cups cooked al dente* pasta (I used farfalle/bowtie but you can use penne, macaroni etc.)
* make sure to not overcook the pasta.. as the hot sauce will cook it a bit more.

In a large nonstick skillet combine tomato sauce, garlic, Italian seasoning, parsley and black pepper. Bring mixture to a boil. Add cottage cheese, 1 cup mozzarella cheese and parmesan cheese. Mix well. Continue cooking for 5 minutes or until the cheese starts to melt, stirring often. Stir in pasta. Evenly sprinkle remaining mozzarella cheese over top. Lower heat, cover and simmer for 5 minutes or until mozzarella cheese melts.

*You could also add some Italian sausage or ground beef to up the protein in this dish.
