Easy Greek Pasta Salad

I made this delicious pasta salad for the 4th of July and it was a big hit. It is even better the next day. I doubled the recipe and it was gone in a flash! I used tri-color pasta for an extra color boost.

Easy Greek Pasta Salad

1lb-rotini pasta (I used barilla)
1 cup diced tomatoes
1 cup diced red onion
1 cup diced red bell peppers
1/2 cup parmesan cheese (Kraft works fine)
1/2lb sliced salami
1/2 cup pitted kalamata olives

Greek Pasta Salad Dressing:

1/2 cup extra virgin olive oil (I used Colavita
1/2 cup red wine vinegar (I used Pompeian)
1/4 cup of sugar
1 1/2 tablespoons dried oregano
1 teaspoon salt
1/2 teaspoon pepper

Directions:

1.) In a small bowl combine red wine vinegar, sugar and salt. Stir until salt and sugar is dissolved. Then whisk
in olive oil, oregano and pepper.
2.) Cook rotini pasta according to the package checking frequently to ensure pasta is al dente. When pasta is
done drain and rinse with cold water to avoid sticking.
3.) Slice salami into strips and separate slices.
4.) In a large bowl mix together pasta, vegetables, dressing and parmesan cheese in a large bowl.
5.) Chill until ready to serve. It's even better the next day!

  2. It is delicious Nora. I am trying to stay cool over here its just sooo humid and hot. I wish it would break down and rain already!! ha ha
