Cucumber Salad with Lime and Dill Vinaigrette

When I think of spring one of the first thing that comes to mind is fresh produce. This delicious salad is very refreshing and makes an excellent side dish in place of a conventional lettuce based salad.

Cucumber Salad:

2-English Cucumbers-sliced lengthwise, seeds removed and thinly sliced
2-Tomatoes- sliced in half, seeded and diced
1/2 Cup Red Onion-diced

Lime and Dill Vinaigrette:

1/2 Cup Extra Virgin Olive Oil (I like Colavita best)
Juice of 1/2 a lime(or more to desired taste)
3 sprigs fresh dill removed from stem and finely chopped
pinch of sugar(approx 1/2 teaspoon)
Salt and pepper to taste

-In a large bowl place thinly sliced cucumbers, diced tomatoes and onion.
-Whisk together vinaigrette ingredients.
-Combine salad with vinaigrette and enjoy!

Other great additions to this salad would be avocados, bell peppers or olives.
