Chilaquiles (chee-lah-KEE-lehs)
A delicious, cheap and super easy dish from Mexico. This is my take on the dish using some things I already had at home. I was in a pinch for a side dish tonight for dinner. I love this dish its sooooooo tasty!
1 bag corn tortillas (I used mission as its what we had here)
1 28oz can enchilada sauce (I used green but you can use red or green)
2 cups shredded cheese (I used a Mexican blend)
1 4oz can diced green chilies
6 green onions sliced
-Preheat oven to 350
-Place corn tortillas in the bottom of a 9x13 inch pan (I crushed mine a bit)
-Pour can of enchilada sauce over chips
-Sprinkle over can of green chilies
-Sprinkle over sliced green onions
-Sprinkle over shredded cheese
Place in preheated oven and bake for 20-30 minutes
Remove from the oven let sit for about 10 minutes before digging in
You can garnish with more green onions, tomatoes and sour cream if you like
